About Aloo Sabji:

Aloo Sabzi (also spelled aloo sabji or aloo subzi) is a classic dish made of stir fried potatoes with spices.

 Ingredients

3 or 4 medium red potatoes (aloo)
1 small onion (chopped)
1/3 teaspoon garlic powder
2/3 ginger
1 teaspoon turmeric
3 tablespoon vegetable oil
2/3 teaspoon salt or salt to taste

Optional:

2 cloves
1 whole cardamom
1 whole bay leaf (Tej Patta)

 Preparation
1 Boil potatoes until tender in lightly salted water. Make sure to immerse all the potatoes.
2 Peel and chop potatoes in cubes.
3 Chop onions. In a pan, heat oiul and sauté onions until it turns golden brown.
4 Add potatoes, spices and ½ cups of water and stir well.
5 Lower heat. Cook for 5 to 7 minutes. Serve hot.

To reduce calorie in potato curry, add less oil. Sauté onions in hot non stick pan with minimum amount of oil.
