Soan Papdi

Soan Papdi

Soan Papdi, also known as Soan Halwa,is flaky Indian dessert made with besan, flour, ghee, sugar. It is flavored with cardamom and rose water and garnished with toasted pistachio and almond. Soan Papdi can be made at home with a relatively simple recipe. However in recent years, sweet maker and industrially manufactured Soan Papdi has proliferated the households.

 Ingredients

1/2 cup gram flour (Besan)
1/2 cup flour
1 cup sugar
1/2 cup water
1/2 cups of ghee
few pods of cardamom (elaichi)
2 tablespoon rose water (optional)
few toasted unsalted almonds and pistachios bits (garnish)

 
 Preparation

Heat ghee in medium heat in a large saucepan.

2 Slowly toast flours until light brown. Adjust heat if neaded. Remove from heat to a big bowl.
3 In a separate utensil, make sugar syrup by dissolving sugar in water until you get thick syrup at around 235-240 F. At this stage, syrup will form a ball when dropped in cold water and when removed from the water can be easily flattened (soft ball stage). Getting a correct syrup consistency is one of the most important step.
4 Mix syrup in bowl with toasted flour.
5 Beat until it forms flakes. Add almonds and pistachios bits.
6 Pour into a baking dish (cake dish). Pat it down into ~ 1 inch thickness.
7 Wait atleast half hour. Cut into pieces and serve.

For lower calorie in soan papadi, reduce amount of sugar by ¼.
